a toast to the chef


Fuck guidebooks. My personal restaurant philosophy is to try anything with a long line. It rarely fails.

Ole and I discovered a food stall in Chinatown devoted entirely to toast. The toast stand runs like a well-oiled machine, some kind of family job that has probably been making toast in this exact spot for longer than Thailand has had democracy.

There’s a menu, which stands on the hood of a truck. It lists the toppings you can have (including peanuts, condensed milk, and chocolate), and the kinds of toast you can order

1. crispy toast
2. soft toast
3. crispy on the outside, soft on the inside toast

You write your order on a piece of paper and give it to the waiter, who hands it to the toastmaster.

The toastmaster is the engine of the whole operation. He’s in the charge of all the toast, monitoring their donneness, their exact crispiness. I never once saw him look up from his steaming rack of toast.

If you order soft toast, they’ll squirt condensed milk on the inside of it, like some kind of a reverse money-shot. I had a chocolate toast, which promptly came all over my shoes.

It was delicious while it lasted.

    guess many restaurants are older than thai democracy. 555
    anyway, nice find, how about some google maps link, so i can find it on my next adventure in china town.

    i’d love to tell you where it is, but i have no idea! I completely lose my sense of direction in Chinatown. I think it’s on a main road, though, so if you wander around, you’ll probably find it.

    yes, that happenes to me all the time in chinatown. every time if like you have never been there.
